A traditional artisanal pasta shape from Puglia, orecchiette take their name from their distinctive little-ear shape, made by pressing the dough with a thumb. The classic Puglian recipe pairs them with turnip greens, sausage and garlic, but they are just as delicious with a rich meat ragù.
