A traditional pasta shape from Puglia, these small pasta shells measure approximately ¾ of an inch and resemble little domes, with a thinner centre than the edges and a very rough surface. This artisanal pasta is distinguished by its particularly coarse texture, which allows it to retain its structure both during cooking and when tossed in a pan.
Made by Rustichella d'Abruzzo using certified organic “Senatore Cappelli” durum wheat semolina, they are featured in numerous traditional Italian recipes, most notably the classic dish with turnip greens. Alternatively, we recommend pairing them with rich, full-bodied sauces, such as Rustichella d'Abruzzo's white Genovese sauce, served with pan-fried radicchio and a drizzle of Rustichella d'Abruzzo organic Extra Virgin Olive Oil.
